Step-By-Step Directions
1. Heat the Milk (Dairy Version Only)
- Gently warm the milk to 180°F and hold for 5 minutes.
This improves thickness. Dr. Davis does not do this step. I have done it both ways.
- Cool to 100–105°F before adding probiotics.
(Skip this step for coconut milk.)
2. Mix the Base
In a clean bowl or jar:
- Add 1 tablespoon inulin and contents of the 1 capsule
- Stir in 2 tablespoons milk until not lumpy.
- Then add in remaining milk
3. Ferment for 36 Hours
Place the jar in your yogurt maker:
- Temperature: 100–108°F ONLY
- Time: 36 hours
- Do NOT exceed 108°F, or the L. reuteri will die.
You should see slight thickening after about 18 hours.
4. Refrigerate
After fermentation:
- Chill the yogurt for at least 4 hours.
- It will thicken noticeably as it cools.
5. Save a Starter for Next Time
Reserve ¼ cup of finished yogurt
Use it as the starter for your next batch (up to 5–7 generations). This saves money and maintains a strong culture.
How to Use L. Reuteri Yogurt
